Recipe of the Month
Ristotto con Funghi
Serves 2 as a side dish
3oz. minced mushrooms
2oz. diced onions
1oz. butter
1/2 cup Arborio Rice
2 cups hot chicken stock
1 tablespoon butter
2 tablespoons grated cheese. | |
2 or 3qt. Pan: Saute onions and mushrooms in butter for 2 minutes. Add rice
and saute for 2 minutes, coating each grain with butter. Add 1/2 cup hot
chicken stock and stir. As the stock evaporates, add more stock and stir
often. Continue until stock is absorbed. The rice should be creamy and firm.
Fold in the butter and grated cheese. Taste for salt and pepper. Serve in a hot
bowl.
